Luck O’ the Irish Giveaway!

Today is St. Patrick’s Day and I thought I would share what’s on the menu in my house. Being Irish American means a “traditional” meal of corned beef and cabbage, along with Irish Soda bread, potatoes smothered with Kerrygold butter, and of course a good Irish beer, like Guinness or Smithwick’s. But is this really a meal that traces its roots back to the Emerald Isle? Sadly, no. The reality is that until very recently, beef was a luxury that most Irish could never afford. So tomorrow, Dubliners are more likely to be found dining on lamb, pork or bacon. And you would never find someone from County Cork putting green dye in their beer. Saints preserve us! Corned Beef is purely an American tradition. Still, it’s one I grew up with. You can find my favorite easy to make recipes here if you’d like:
